I just made this delicious wintery recipe, Roasted Winter Squash Salad the other night. It is the perfect recipe of winter veggies, a little beer for flavor, and leftovers are just as good the next day! When I decided to make this recipe, I was mostly excited because it had currants in the recipe. I realized that currants are a staple in my pantry. I love them! I used butternut squash and I did substitute scallions for the red onion (i don't like raw red oninons) and roasted pepitas instead of walnuts. Mike hates celery so he was watching in fear as I was mixing this salad. I told him not to worry and he ate it faster than I did so, it was a hit despite the little green pieces of celery!
